Chives are a versatile perennial herb known for their mild onion-like flavor. They produce slender, grass-like green stems and edible purple flowers in early summer, which add a decorative touch to dishes.

They grow easily in pots or in the ground and are perfect for kitchen gardens and urban spaces. When properly harvested, they regrow quickly and produce continuously.

Where can chives be grown?

Chives grow well in zones 3 to 9, in full sun to partial shade, in rich, well-drained soil. They are ideal for borders, vegetable gardens, raised beds, and containers. Once established, they become drought-tolerant and very easy to maintain.

History and historical uses

Originating from Europe, Asia, and North America, chives have been cultivated for centuries for their culinary and medicinal uses. They were traditionally valued for their digestive and antibacterial properties. Today, they are a common ingredient in soups, salads, eggs, and potato dishes.

Information on growing zones in Canada

  • Zones 8–9: Sow directly in fall or early spring for an extended season.
  • Zones 5–7: Start indoors in late winter or sow directly in spring after the last frost.
  • Zones 3–4: Sow directly in spring or mulch heavily in fall to protect roots during winter.

How to Grow and Harvest Chives

Planting:
Sow seeds 0.5 cm (¼ in) deep, spacing plants 15 to 20 cm (6 to 8 in) apart.

Watering:
Keep the soil evenly moist during germination. Once established, chives tolerate short periods of drought.

Harvesting:
Cut leaves as needed, removing no more than one-third of the plant at a time. Flowers can also be harvested for salads and garnishes.

Care:
Divide clumps every few years to maintain plant vigor and productivity.

Tips for Storing Seeds (for Future Crops)

Allow plants to flower:
Let some plants reach full bloom to produce seed heads.

Seed harvest:
When the flowers turn dry and brown, gently shake to release the seeds.

Drying and cleaning:
Spread the seeds on a cloth and let them dry completely before storing.

Storage:
Store seeds in an airtight container in a cool, dark place. They remain viable for up to 3 years if properly stored.
