Beluga caviar is considered one of the most prestigious and sought-after caviars in the world. It comes exclusively from the Huso Huso sturgeon, one of the largest sturgeon species.

Requiring many years to reach full maturity, the Huso Huso produces large pearls of 3.2 to 3.6 mm, with beautiful steel-grey hues. Its limited production and long maturation cycle contribute to its rarity and prestige.

On the palate, Beluga favors elegance and finesse: an exceptionally melting texture, a rich, buttery sweetness, followed by a delicate saline and iodized finish. Where Osetra stands out for its more complex and slightly nutty notes, Beluga offers a softer, more enveloping, and refined experience.

Is Beluga caviar legal in Canada?

Yes. Our Beluga comes from a sustainable Huso Huso farm in Italy. Wild Beluga from the Caspian Sea is subject to strict international restrictions under CITES conservation regulations. Farmed Beluga therefore provides a legal and sustainable alternative to experience the exceptional characteristics of this caviar.

What is the difference between Beluga and Osetra?
