Lumpfish caviar comes from the lumpfish (Cyclopterus lumpus), a common species in the North Atlantic. Compared to sturgeon caviar, it is distinguished by a more saline and pronounced flavor as well as a firm texture, while offering an excellent and more affordable alternative.
