Zones 8-9: Sow in early spring or late summer for successive harvests.
Zones 5-7: Sow in late spring for an autumn and winter harvest.

How to Grow and Harvest Carrots

Planting: Sow seeds 1 cm (0.5 in) deep, in rows 30 cm (12 in) apart. Thin plants to 5–8 cm (2–3 in) once well established.

Watering: Keep soil consistently moist to ensure even root development.

Harvesting: Harvest when roots reach desired size, or leave in the ground through winter for a sweeter flavor. Protect tops with mulch to prevent frost damage.

Tips for Seed Saving for Future Supply

Allow Plants to Flower: Carrots are biennial, so allow some plants to overwinter and flower in their second year.

Harvest Seeds: When flower umbels become dry and brown, cut them and place in a paper bag to collect seeds.

Drying and Cleaning: Spread seeds on a cloth to dry completely. Then separate seeds from debris.

Storage: Store in an airtight container in a cool, dark place. When properly stored, seeds remain viable for up to 3 years.
