The fleshy flower buds, harvested before they fully bloom, are highly sought after for their delicate flavor and tender texture. Where can globe artichokes be grown?

Globe artichokes grow well in zones 4 to 9, in full sun and well-drained soil. Perennial in mild climates, it can also be grown as an annual in colder regions.

History and traditional uses

Originally from the Mediterranean region, the artichoke has been cultivated for centuries as a delicacy and medicinal plant. Ancient Greeks and Romans attributed digestive benefits to it, and it became a staple in European cuisine. Today, it remains a key ingredient in Mediterranean and gourmet cuisine.

Zones 8–9: Direct sowing in early spring or fall for perennial cultivation.

How to grow and harvest globe artichoke

Planting: Sow seeds 6 mm (¼ in) deep, spacing plants 90 cm (3 ft) apart.
Watering: Maintain uniformly moist but well-drained soil.

Harvesting:
Pick flower buds before they fully open for the best texture.
Cut them just above the stem with a sharp knife when they are firm.

Maintenance: Remove faded flower stalks to encourage continuous production.

Seed saving tips for future supply

Flowering and bolting: Allow some flower heads to fully mature and dry on the plant.
Seed harvesting: Collect seeds when flower heads turn brown and dry.
Drying and cleaning: Separate seeds from husks and allow them to dry completely.
Storage: Store in an airtight container in a cool, dark place. Well-preserved seeds remain viable for up to 5 years.
