Kaluga caviar, from the Huso dauricus sturgeon, is one of the rarest and most prestigious caviars in the world. Its generous eggs, measuring approximately 3.2 to 3.6 mm, display a magnificent golden to golden-brown hue, a smooth and creamy texture, and an exceptional aromatic profile.

On the palate, Kaluga first reveals a rich combination of butter and delicate saline notes, followed by slightly nutty nuances, before giving way to a long, fresh, and subtly oceanic finish.

Originating from the Amur River basin in the Far East, Huso dauricus belongs to the same genus as the famous Beluga (Huso huso). Both species share several remarkable characteristics: large eggs, a buttery richness, a silky texture, and a beautiful aromatic depth.

What is the difference between Kaluga and Beluga?

Kaluga and Beluga are very similar. They both belong to the Huso genus and share many characteristics: large eggs, buttery richness, creamy texture, and a long finish.

Beluga generally exhibits a slightly more pronounced saline and umami intensity, while Kaluga offers a rounder, softer, and more enveloping profile. The difference may be subtle on the palate, but both represent distinct expressions of this prestigious caviar family.

Why is Kaluga caviar golden brown?

Contrary to the idea that caviar must necessarily be black, sturgeon eggs can naturally display a wide variety of colors, ranging from white and yellow to golden, gray, brown, and green.

Kaluga stands out with its shades ranging from deep amber to warm golden brown. This coloration is a natural characteristic related to the genetics of the species and is not the result of any particular treatment.

Our Amur and Imperial also feature this same family of warm hues, characteristic of species originating from the Amur River basin.

Is Kaluga caviar legal in Canada?

Yes. Farmed Kaluga can be sold in Canada when it complies with applicable requirements, including those related to CITES and import. Unlike wild Beluga from the Caspian Sea, which is subject to strict international restrictions, Kaluga from sustainable farms is a legal and available option.
