Amur caviar, from the Amur sturgeon (Acipenser schrenckii), offers an elegant and refined experience, while being one of the most accessible introductions to the prestigious family of Amur River caviars.

Its medium to large pearls, measuring approximately 2.6 to 3.0 mm, have a firm texture and a magnificent color ranging from golden to amber, which distinguishes it from darker caviars.

On the palate, the profile is delicate and balanced: a slight buttery richness on the attack, followed by a gentle salinity, subtly earthy notes, and a fresh, clean finish. An elegant caviar that offers great finesse without being too intense.

Originating from the same Amur River basin as our Kaluga (Huso dauricus) caviar, the Amur sturgeon shares with it that magnificent golden signature and natural elegance. However, it offers a lighter and more delicate expression.

Amur is also one of the parent species of our Imperial caviar, a Kaluga and Amur hybrid that naturally sits between the two in terms of flavor and character.

What is the difference between Amur, Kaluga, and Imperial?

They can be considered as three different expressions of the same family.

Kaluga is the richest and most prestigious of the three, with large golden to golden-brown pearls, a generous texture, a deep buttery richness, and a long finish.

Imperial, a hybrid of Kaluga and Amur, sits between the two. Its medium-sized eggs offer a richer flavor, combining the subtly earthy notes of Amur with some of the richness of Kaluga.

Amur is the lightest and most delicate of the three: clean, slightly saline, subtly earthy, and fresh. It is an excellent starting point for discovering the Amur River caviar family, before moving on to richer and more complex profiles.
